It is important to make the distinction between the varieties and qualities of Olive Oil. Two different varieties of olive tree can produce olive oils with different colour, aroma and taste but can at the same time be both quality olive oil.

The quality of an Olive Oil is determined by the region, variety and maturity of the olives, the sanitary state of the fruits, process of extraction, method of conservation and the age of the Olive Oil. 

To test the quality of an Olive Oil there are two types of analyses.

Chemical analysis
Organoleptic analysis
